Staffordshire oatcakes are large pancakes made of wheat flour oatmeal and yeast cooked on a griddle. Not widely available outside the Potteries (as the city is known) they are probably the thing that most people miss when they move away from Stoke-on-Trent - but they can be frozen so I stock up when I visit my parents who live there! photo
